In this cultural cooking extravaganza, we are led through a range of Vietnamese produce and recipes by food consultant Liz Bretherton and Vietnamese cooking tutor Agnes Dinh. Liz Bretherton looks at the wonderful and extensive range of fresh produce now being produced in Australia for use in Asian cooking. These distinctive ingredients, which set Vietnamese cuisine apart from food in other Asian countries, are explained. Selected recipes are covered with easy to follow, step by step cooking demonstrations. Of course traditional Vietnamese food should be eaten in the traditional way - so Liz and Agnes demonstrate how to serve and eat a number of dishes.

Acids and Bases Around the Home

This program familiarises students with the features of acids and bases, and discusses their physical and chemical properties. The pH scale is introduced with examples of strong and weak acids and bases and the concept of neutral substances is explored. The use of indicators to test the pH of acids and bases is explained, as well as showing the variety of indicators available and their specific uses. Students are shown how to make their own red cabbage indicator in the kitchen, and examples of acids and bases commonly found in the home are discussed. This program is one of a two part series on the preparation and properties of polymers. Concentrating specifically on the addition process, it will be invaluable in demonstrating this complex subject. Students are introduced to the concept of addition polymerization using polyethene from ethene. The program features many examples of the different types and properties of polymers, and includes definition of terms such as monomer and polymer, simple molecular models to demonstrate how the double bonds in the monomers break to form the polymer, and demonstration of how the alignment of the monomer is important for the successful formation of the polymer.
